Black pepper is more spicy than green pepper and more aromatic but milder than white pepper. All types of pepper are harvested from the same plant and differ in taste only. The reason is the degree of ripeness and the way of processing. Peppercorns grow in bunches on a climbing vine. Most black peppercorns are harvested shortly before their ripening phase while still green. The 1001 Organic black pepper is grown by three cooperatives of smallholder farmers on Pemba island, many of whose families have been growing black pepper and other spices (including our cinnamon, cloves and nutmeg) for generations. The 1001 Organic peppercorns are allowed to ripen on the vine before being hand-picked, blanched and sun-dried, resulting in a rich chocolate-colored peppercorn berry with dense wrinkles and a bright, fruity spiciness.
Black pepper is used for the seasoning of dark soups, all sorts of meat and poultry, marinades, salads, mushrooms, cabbage, tomatoes, and all kind of fish, cabbage, rice and pasta dishes. The pepper can be used as whole grains or freshly ground.
Black Pepper activates the metabolism and carries some anti-inflammatory, antimicrobial and antiallergic properties. Therefore, black pepper is recommended as natural remedy for indigestion, infections, inflammation, colds and flu infections as well as respiratory and allergy allergies.
